Here's an easy, tasty dessert to sweeten those long winter days!
 
Texas Sheet Cake
Serves 20
2 c. unbleached flour
2 c. sugar
1 t. each, cinnamon & baking soda & vanilla
1/2 c. butter
1/4 t. salt
1/4 c. water
1/4 c. cocoa (unsweetened)
1/2 c. buttermilk
2 large eggs
Heat oven to 375 degreesF.  Prepare 15 x 10" pan by spraying with cooking spray and dusting with flour.
Combine flour, sugar, soda, cinnamon and salt and mix well.  Melt butter in saucepan and add water and cocoa.  Bring to a boil, stirring constantly.  Remove from heat and add flour mixture.  Beat well.  Add buttermilk, vanilla and egg and mix well.  Place in prepared pan and bake 20 minutes or until wooden pick inserted comes out clean.   Cool on wire rack.
Meanwhile, prepare frosting:  Combine 6 T. butter, 1/2 c. milk and 1/4 unsweetened cocoa in saucepan.  Bring to boil, stirring constantly.  Remove from heat and add 3 c. powdered sugar, 2 t. vanilla and 1/4 c. chopped pecans.  Mix well and spread over warm cake.  Cool completely before serving.
